AKIHITO SHINTANI
Born in Kishiwada City, Osaka. After graduating from Tsuji Culinary Institute, he trained at a Chinese restaurant run by his father. From 1997, he worked at Chingming (Kyoto, Gion, etc.) where he studied Hunan and Sichuan cuisine for 6 years. After two years of experience at Chimisai (Kashiwa, Chiba), in 2007 he opened his own restaurant “LaoTao”in Osaka.
Based on his specialty, traditional Hunan cuisine, he offers Chinese cuisine that keeps changing with the times. He has a particularly good reputation for handling vegetables, and its strength is delicate dishes that draw out the taste of the ingredients themselves and arrange them in his own way.
In 2022, he opened Kamigata Cuisine Shintani in pursuit of a higher level in his career as a chef, “Kamigata Chinese” is a new concept of Chinese cuisine that Shintani independently defined and established, and it is also the biggest challenge that he has devoted his entire cooking life to.
